So this wasn’t on my bucket list but after a trip up to Lake Sakakawea a couple weekends ago to visit some friends camping I had the itch to return and fish.
Garrett and I enjoy fishing together. So we often talk about how we need to make a trip to our lake cabin, but earlier last week we decided we would make a short day trip up to Lake Sakakawea. I did some “Googling” and found a boat rental place called Dakota Waters Resort.
They were recently purchased by a family that relocated to North Dakota. I visited with the young woman who helped us get our boat ready. She had an incredible story, her whole family did. The first question I asked her is “Do you like it here?” She said she loved it, that the people are so nice and friendly here vs. back home in Oregon. That made me so happy to hear. Her dad moved to Watford City two years ago and took work and now owns his own construction business. How fantastic is that! Then her mom moved out there and works in Watford City as well while she (only 21 years old) owns 1/2 of Dakota Waters Resort. Her parents own the other 1/2 but she runs it, she said. Wow, I was so impressed and jealous at the same time. I want to own a business! She was so nice, showed us how to work the boat and everything, took it out with us to make sure the motor was working properly. She knocked my socks off for a 21 year old. And she has big dreams, to expand, buy cabins, purchase more boats and jet skis and get her B.S. in Business. I went on and on about the online programs she could do during the winter when she goes back to Watford City to waitress while the resort is closed – oh but she wants to have 1/2 of it hooked up for access in the winter by next year. Dream big girl! I am so glad North Dakota could offer your family a great life.
Check out our boat. Isn’t exactly a “dream” but it made due for 5 hours of fishing. For $95 for a whole day (5 am – 9 pm) and one free tank of gas, it was a steal. But it wasn’t super comfy. 
We caught a dozen or so small mouth bass and one large walleye we kept. 
That’s the walleye below, he looks angry.
Which we had for supper last night. I was really craving fried fish (vs. grilled or broiled) so I heated up some oil in my cast iron skillet and found a fantastic recipe for honey fried walleye. I HIGHLY RECOMMEND THIS RECIPE! I’m sorry I was so hungry I forgot to take a photo.
As a side dish I made quinoa with summer squash and zucchini. I found these packets of quinoa, almost resembling rice-a-roni with the seasoning already in it. It was a garlic flavor and I added in lots of extra vegetables.
For a snack earlier this afternoon I pan fried egg plant with a little oil on each side, salt and pepper, then rubbed on some homemade pesto and sprinkled mozzarella on top. I removed that from the pan when the cheese was melted and topped with a sliced tomato and basil leaf. This was awesome! I’d made this as a appetizer for a gathering.
I’m using up my vegetables from the CSA. I love getting garden fresh vegetables.
