Devine! This is my new favorite combination. Mango – avocado – and red onion — with some other stuff added in there. I came across this combination at my bachelorette party. It was served with chicken.
I made this with the intent of topping chicken quesadilla with it.
Mango Avocado Salsa
Serves: 2 – I’m going to say this serves two because Garrett and I managed to eat all of this within 24 hours. But if it lasts, it could probably serve four.
Ingredients
- 1 avocado, diced
- 1 mango, diced
- 1/2 fresh jalapeno, finely minced
- 1/2 c. fresh cilantro, chopped
- 1/2 c. red onion, diced
- 1 lime, juiced
- 1 tsp salt
- 2-3 garlic cloves, minced
- 1 roma tomato, diced
Start with the mango and avocado first. Once you have them in a bowl, add the lime juice to stop the avocado from going brown. Add in the rest of the ingredients and mix. Let it sit in the fridge for 30 minutes and then taste test it. You may want to add more salt. I used garlic scapes instead of garlic cloves because I had them left over from my CSA last week and am getting a fresh load tomorrow.
I am sorry I don’t have a picture of this. I should have taken one right away because I knew it would get eaten! I then took two whole wheat tortillas and put some Weight Watchers Mexican cheese and shredded chicken breast on the inside. I cooked this on my panini machine. Done it 2 minutes! It was a fast dinner once the salsa was made. We will most definitely be making this salsa again.
