Banana Bread

We all freeze ripen bananas with the hopes that we’ll find something to make out of them later. Well Monday was that night for me. I was going to make banana bread. You see, I am not a banana lover. I hate all banana candy, even candy that looks like bananas (Runts). But sometime during the past year I was experiencing severe muscle cramps in my legs and feet. They got so bad I was asking friends for advice on Facebook and a large number of the responses were to eat bananas. So I did.

I forced myself to eat them and have been eating one a day for almost four or five months. But sometimes I go overboard in my purchases and thus throw them in the freezer when they get too brown.

I wanted to make a healthy recipe so I took a popular one from Allrecipes.com called Banana Banana Bread and made a few changes.

Banana Bread

Serves: 12 Calories: 160/slice

Ingredients:

  • 1 1/2 c. all-purpose flour
  • 1/2 c. whole wheat flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/4 c. butter
  • 1/4 c. unsweetened applesauce
  • 1/2 c. brown sugar
  • 2 eggs, beaten
  • 2 c. mashed, overripe bananas
  • 1 tsp cinnamon
  • 1/2 tsp vanilla
  • Dash of nutmeg

Preheat oven to 350 degrees F. Grease a 9×5 inch loaf pan.

In a large bowl, combine both flours, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Add in applesauce to butter mixture. Stir in eggs and mashed bananas until well blended. Add in cinnamon, vanilla, and nutmeg. Stir banana mixture into flour mixture; stir just to moisten. At this time, you could mix in walnuts, chocolate chips, or anything else you like. Pour batter into prepared loaf pan.

Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, and then turn out onto a wire rack. Slice and enjoy! This picture is only half a loaf. We’ve…ok I have eaten a majority of it already.

I really liked it. I spread on some yogurt butter and devoured two pieces still warm. I love warm bread that melts your butter. Do you like to add anything to your banana bread? I always need to have crunchy walnuts in mine. As you can see, mine are only on the top. I forgot until it was in the pan so I sprinkled some on top before going in the oven.

On a side note, check out these awesome 100 calorie Starbucks frappuccino drinks I found at Target. They taste just like the drive-through drink and at 100 calories, its hard to beat.

    I was on a banana bread kick for a month and made like 4 loafs! You can actually swap to 1.5 wheat flour and .5 of white! I have the recipe on my site if you wanna check it out! I don’t use butter or anything!

    When i get some bad muscle cramps, i would just take some OTC pain killers and food supplements that helps and healing the joints and muscles. ;,,’;
