Jamaican Coco Bread

Happy Tuesday! It is 91 degrees outside and humid. I just went for a three mile run and thought I was going to pass out. So I turned around and came home. We spent our Sunday unsuccessfully fishing on the Missouri River. At least we had a nice day. What a beautiful North Dakota weekend we had. Friday we stayed home. It was so nice to be home again. Saturday, I accomplished a ton. When you get married, you have so many new gifts that need to find a home in your house, old things that need to be donated or thrown away because you got an upgrade, and that means a lot of trash, boxes, gift bags, that need to be thrown. After a fun trip to Target, I spent the day washing new bedding, donating old towels, hanging new shower curtains, trying to put together a shelf, cleaning out the “wedding room” and turning it back in to a guest room, and making stew. Stew in the middle of June? Am I crazy? (Don’t answer that.)

I got this six quart Dutch oven as a wedding gift and have always wanted to have one. I see Giada and Ina use them all the time. I went online and Googled healthy Dutch oven recipe, found a beef stew, and went from there. It was OK. Not the best, so I’m not sharing the recipe. If you really want it, contact me!

But today I want to share with you a recipe from Jamaica! I’ll forewarn you, it’s not healthy – it’s not unhealthy either. It’s a bread.

Coco bread is what they call it. I describe it as a round piece of dough, folded, and then folded again.

Here is how you make it. I ate this at every meal, and  at lunch they made panini’s out of it. It was great. So Friday night I made four portions of Coco bread.

I enjoyed my first one with some yogurt butter on it and the second one at lunch the next day. I put mustard, pepper jack cheese, and turkey on it and pressed it in my panini maker. Delicious!

I enjoyed the Jamaican food. I loved the abundance of spices in each dish. We tried goat curry, fish in coconut milk, coconut water (straight from a coconut), and had plenty of fruit punch.
