I had the pleasure of meeting Jenna and Nicole, the Crockin’ Girls at my Women’s Leadership Program through the Center for Technology and Business. These two moms who found a niche for simple, slow-cooker recipes via Facebook have turned their business into approx. 580,000 followers on Facebook, a blog, recipe cookbook, podcasts, and more. Check them out on Facebook. They were so kind as to give me an autographed copy! You can get your own copy on Amazon by clicking here.
So my first recipe was Nicole’s Corn Chowder (pg. 87)
Ingredients:
- 6 to 8 potatoes, peeled and cubed
- 1 can creamed corn
- 1 can whole corn, drained
- 2 c. chicken broth
- 8 oz. diced ham
- 1 c. onions, diced
- salt and pepper, to taste
- 1/4 c. butter
- 1 to 2 c. half-and-half
Place potatoes, both cans of corn, chicken broth, ham, and onions into the slow-cooker. Cook on LOW for 7 to 8 hours. Mash the mixture to your desired consistency and then add the butter and half-and-half. Cook in HIGH for an additional 30 minutes.
Some changes I made to this soup to make it low calorie, I used 98% fat free sodium free chicken broth, I found Jenni-O turkey ham (60 calories for 2 ounces), light Parkay butter and fat free half-and-half. We also added sliced carrots.
