Slow Cooker Chicken Tacos

My girlfriends threw me the coolest bachelorette party this weekend. I won’t get in to all the details but they did create a wonderful (almost) seven course meal for me and my closest friends! And look how cute they decorated. This is my bridesmaid Kassy and I.

We needed to use up some frozen chicken breasts so I decided to attempt a Slow Cooker Chicken Taco recipe. SUCCESS! The chicken was so juicy after 8 hours on low.

Slow Cooker Chicken Tacos

Serves: 6 Calories: 200 calories

2 large chicken breasts (16 oz.)
1 Taco seasoning packet
1 medium onion, chopped
2 garlic cloves, minced
1 16 oz. jar of salsa

I chopped up the onion and garlic last night, threw it in a gallon sized bag along with the chicken and salsa so in the morning I could just dump it in, add the seasoning, turn on the crock pot and go. Cook on low for 8 hours. When I got home I used two forks to shred the chicken in the slow cooker. See my handy dandy Reynolds Liner? I couldn’t go without these.

(That’s not a puddle of fat. It’s all the juice/salsa from the chicken.)

I ran to the grocery store over lunch and looked for the lowest calorie tortilla I could find. I ended up purchasing La Banderita Low Carb Tortillas (80 calories each). I also got my first bag of Weight Watchers Mexican Blend. I was looking for the lowest calorie (and highest volume of serving) and landed on this (1/3 c. for 80 calories), and I grabbed some shredded lettuce.

After shredded the chicken I thought to myself, “This chicken would be awesome in a quesadilla.” So I toasted one tortilla on the NuWave for 3 minutes to get a little crispy. Then I added chicken, some of my Five Minute Salsa, and cheese. I topped it with another tortilla and baked for 5 minutes. Delicious! While this was baking in the NuWave I ate a banana as an appetizer. I couldn’t even finish the whole quesadilla I was so full so Garrett got 1/4, lucky guy.

Then when Garrett got home he made burritos. So neither of us made “tacos.” How funny? Well that’s what the chicken was intended for so I am sticking with the name. Enjoy the evening, I am out to walk Buster!
