Sounds yummy, doesn’t it? I had to break in our new crock pot with something good.
I just got done showering from what felt like the longest run ever. I forgot my iPod at home and wasn’t going to run home and get it and tease Buster by leaving right away; so I went without it. And on top of that it rained on me. I’ve never ran in the rain before but rain drops hitting your eye balls isn’t exactly my preferred method of exercise.

Taco Stuffed Green Peppers
Serves: 5 Calories: 320
Ingredients:
- 1 lb. lean ground beef
- 1 packet taco seasoning
- Medium onion, diced
- 5 green peppers
- 1/2 can of diced tomatoes, do not drain
- 90 second whole wheat rice
- 1 can of black beans, drained and rinsed
- Corn (optional)
- Low-fat mozzarella cheese (optional topping)
I cooked the beef and onion together last night and added in the taco seasoning with 1/2 c. water. Let it cool and put it in a storage container until today. I also cut the tops off the green onions and ripped as much of the ribs out as possible, and rinsed the seeds out. I stored these in a storage bag until today.
Over lunch hour I drained the tomatoes into a bowl. I lined my slow cooker with those awesome Reynolds liners so you don’t have to clean up crusty stuff, and I put the tomato juice on the bottom. I mixed in a large bowl the ground beef mixture, tomatoes, black beans, and rice. You could mix in corn here if you wanted. Then I stuffed the peppers and placed them in the slow cooker.
These take about 6 hours on low. About 5 1/2 hours in, I did top them with some low-fat shredded mozzarella.
I cut mine up in to bite size pieces and topped it with some of my favorite salsa: On the Border Medium (15 calories/2 Tbs).

We grew up with these…and so I love them so much. Such good memories having this after a long day of working in the garden!
They were tasty. There was so much liquid in them though. Did you use the tomato juice from the can of tomatoes or what did you do? I sort of feel like the juices washed away some of the taco seasoning.
