I found this recipe through Pinterest.com and it looked too good not to try. It had three of my favorite things: shrimp, pasta, and cheese.
I did adapt from the original recipe just a tad, which can be found at www.howsweeteats.com.
Spicy Parmesan Shrimp Skillet
Servings: 6 (1 heaping cup full) Calories: 350/serving
- 1 lb. raw peeled and deveined shrimp
- 1/3 c. extra virgin olive oil
- 1/4 c. freshly grated Parmesan
- 4 garlic cloves, minced
- 1 teaspoons brown sugar
- 1 Tablespoon soy sauce
- 1/2 teaspoon red pepper flakes
- 2 cups uncooked Barilla Plus Penne Pasta
- 1 bag frozen Birdseye Pepper Stir Fry
In a bowl, whisk together oil, Parmesan, brown sugar, soy sauce, garlic, and red pepper flakes. Add shrimp to large zip lock bag and pour marinade over. Seal bag and shake. Refrigerate for 4 hours (min. 30 minutes).
Bring water to boil and cook penne according to box. Heat large skillet and cook vegetables through until warm. Drain water. Add shrimp mixture and marinade and cook until shrimp are done. Toss in penne to coat and serve with a little grated Parmesan on top.
